The word “may” may have multiple meanings, but to me it only means one thing: the start of summer. Though the official season of barbecues, sun-kissed skin and long, lazy days that call for poolside revelry doesn’t begin until next month, in my book, it commences on Memorial Day. As a youngster, I remember it was typically the first weekend of the year when my family would set sail on our family friend’s boat (the best kind of friend-ship to have, right?) at Folsom Lake. We’d bring a cooler packed to the gills with sandwiches, Capri Suns, chips and dips aplenty; and swim, water-ski and inner tube until the sun dipped down and our fingers and lips pruned. Mikuni Restaurant Group CDO (Chief Dreaming Officer) Taro Arai grew up on a small island in southern Japan and was often bullied for his refusal to conform. Once, he shaved a strip of hair down the center of his scalp. “I had a reverse mohawk,” he says, adding with a laugh, “I got into trouble for that.” His role model growing up was his father, a pastor, who—despite their family’s limited income—regularly fed up to 15 people in need out of their kitchen. When Arai was 16, his family moved to California and opened a Japanese restaurant. They had no prior experience, and the early days were a struggle, much of which is documented in his memoir Abundance: Finding the American Dream in a Japanese Kitchen. He became a self-taught sushi chef, and his flair for experimentation eventually helped make Mikuni a success. On May 9, the

group is hosting its 30th anniversary party, of which a portion of proceeds will go to 3Strands Global, UC Davis Children’s Hospital, and Cosumnes Oaks High School’s Culinary Arts Academy. Indeed, Arai has continued to follow in his father’s footsteps. Through the annual Mikuni Summer Golf Classic, the Mikuni Charitable Foundation has raised tens of thousands of dollars for local and national nonprofits, including over a million dollars for breast cancer awareness. And these days, even when Arai shaves his head, he does so for a cause— most recently to raise money for childhood cancer research. “My dad always says, ‘be humble, give back to God, and give back to the community,’” he shares. “I believe we’re here for that reason.” —Amber Foster

SEASON’S EATINGS: PlacerGROWN and Foothill Farmers’ Market by CAROL ARNOLD NUTRITION // All the beautiful blooms of the past few months are starting to bear fruit, including one of our favorite fruits: cherries! These ruby-colored jewels are a true favorite at foothill farmers’ markets. Cherries come in two primary varieties: tart and sweet. Bing cherries are the most common sweet variety in our area and best enjoyed fresh; tart cherries, such as the Queen Anne variety, are best for cooking. Sweet cherries contain fiber, vitamin C, carotenoids and anthocyanins, which may play a role in cancer prevention; what’s more, one cup contains about as much potassium as a small banana. Tart cherries have anti-inflammatory benefits, and can help lower the risk of gout attacks and reduce the pain and inflammation of arthritis; drinking the juice may also increase melatonin levels, thus helping you fall asleep.

SELECTION AND STORAGE // Choose sweet cherries that have a deep, dark saturation of color and are firm. If the stems are attached, a bright green color indicates freshness. If there’s no stem, check that there isn’t any wrinkling along the “shoulders” of the fruit or decay at the stem site. Sour cherries are less firm and tend to have a blush of color instead of a solid shade; they can also have brown flecks, which simply indicate further sugar accumulation. Red cherries have this too, but it’s less visible. To prevent splits or spoilage, wash them just before eating. Big Day of Giving

It can be difficult finding a nonprofit to donate to, but with Big Day of Giving (BDOG), you can put those worries aside. Their website covers 600 local nonprofits with information about the organization and its needs. Once you’ve chosen one (or more) to support, wait until midnight on May 4 to donate, as this is the main event for BDOG. For 24 hours, donations can be made online and will be tallied as the day goes on. This community-driven event is only in its third year and has already raised over $16 million. “Everyone whose life is touched by the important work that nonprofits in the Sacramento region do benefit from BDOG. They make our neighborhoods vibrant, empower young people, protect our landscapes, and serve our most vulnerable populations,” explains Sacramento Region Community Foundation Marketing Associate Vasey Coman. Local nonprofits participating include Zafia's Family House and Blue Line Arts, and some have activities happening the day of. Locals are encouraged to donate locally, in any amount, as the benefits are often seen first-hand. “Every time someone in our community makes a gift to a cause they love, there’s a reason to be joyful and celebrate, so we expect to do a lot of celebrating during BDOG on May 4!” says Coman. —Emily Peter

ancy Polli uses a technique called “intuitive painting,”

where she allows her pieces to unfold as they please. As a teacher and marriage and family therapist who uses art interventions in her practice, Polli—who’s largely inspired by art nouveau—passes her free-flowing, expressive style onto clients and students. “I love the opportunity to see and create work that has come from the artist’s soul, not the mastery of their tools,” says Polli. Opening her studio twice a year to the public, you can view Polli’s stunning acrylic and mixed media works at the upcoming North Auburn Art Studios Tour (May 13-14) and the PlacerArts Studios Tour (November 10-12). HLB: HOW WERE YOU INFLUENCED ARTISTICALLY AS A CHILD? NP: I grew up in San Francisco and would go to the Legion of Honor and de Young museums a couple times a month. Because I lived on a busy street and didn’t have other children nearby, I spent much of my time playing [indoors] by myself—[using my] imagination, playing the piano, drawing and coloring. I took art classes in high school and started

college as an art major, but women weren’t encouraged to be artists. I lacked the courage to try and make it my career, but I’ve continued to make art for myself, off and on, my entire life.

NP: There are many [life] events and emotions that are so overwhelming we simply don’t have words for them. Making art allows what’s inside to be expressed in a way that [enables] clients to take a look at what’s going on, sometimes be surprised, and allow feelings to be processed. Pass the Salt Halotherapy 101

Halotherapy, also known as dry salt therapy, is a holistic approach that mimics the microclimate of a salt cave and can help treat conditions such as allergies, asthma, eczema, psoriasis, snoring, sleep apnea and stress, among others. “Dry salt air is dispersed into an enclosed or sealed room through a unique process generated by a halogenerator,” says Erica Colby, owner of SALTS in Granite Bay. “This type of treatment is a safe and effective way of using salt’s natural antibacterial, anti-inflammatory and super-absorbent properties to provide relief for respiratory and skin conditions.”

It’s the same salt that hospitals use and the same type [that] all the research has been conducted on.” When salt is heated, it becomes extremely dry and kinetically more active. “This heated and dry pure sodium chloride is then crushed into microsized particles and dispersed into the air in an enclosed environment,” Colby continues. “When microparticles of dry salt are inhaled into the respiratory system, it does its job by absorbing and removing allergens, toxins and foreign substances in your lungs and throughout your respiratory tract. Salt also reduces any inflammation and opens airway passages, [thus] making it easier to breathe.” Halotherapy offers the best results when practiced regularly. The benefits are accumulative where consistency and frequency is the key. Colby says halotherapy is also safe for children, and that they often respond to the natural treatment faster than adults. Rachelle Brendlin, marketing manager at Heavenly Salt Spa in Sacramento, says you may salt safely two times a day, though it could become quite costly in the long run, as most sessions cost around $40-$50. She also recommends going daily for eight to 12 days if you have severe ailments and would like quick results. hen Anthony DeShaun Davis reflects on his upbringing, he sees a long line of mentors, teachers and coaches who helped shape the person he is today. “I grew up with a single mother who worked very hard so we could have the basics, and on occasion do something fun recreationally or go out to eat,” he shares. “But she always knew she had to keep me active in programs and sports, or the streets would consume me.” Davis serves as the youth development c o o r d i n a t o r a t E x c e l R o s e v i l l e, a community center serving children ages 5-18 from low-income households. All of its programs—including resources for families facing unemployment, hunger and homelessness—are offered free of charge. Excel was founded in 1994 by a Roseville Christian Caudillo and Tristen Mitchell

Bennett describes herself as “the client I serve.” Like Davis, she was exposed to supportive programs and mentors growing up whom she credits with shaping her success. “We go the extra mile to empower each employee to become a master of their various roles, while recruiting many community volunteers, [including] retired teachers, professionals, parents, and college and high school students,” she explains. “Through challenges [and] economic downturn, it has forced me to be very creative and develop new program models to support students and their families.” The annual cost to support an Excel student is $3,000, which includes a daily meal and snack; vocational development; sports; field trips; and activities emphasizing educational advancement, leadership, arts, health and wellness. An increased operating budget would not only expand the

program’s reach, but allow for the addition of a GED program for parents, workforce development training for students and parents, and a college scholarship endowment fund. Volunteers and donations are vital to Excel’s success and keep much-needed resources within reach for area families in need. Board President Pauline Roccucci encourages members of the community to consider sharing their time with a child in need. “[They] can volunteer to work with children [by listening] to them read and [helping] with homework, [or assisting] in our vegetable garden,” she says. “If you have a talent like playing an instrument and would like to share [it] for one of our activities, it would be appreciated.” For Davis, the impact of his work is clear and he hopes to see Excel grow throughout the region. “It’s shown me that the smallest things can make a child’s day,” he shares. “Adults can lead by example and do good things, and the youth will follow. The Yummy Cookie // Roseville’s Highland Reserve Marketplace just got a little bit sweeter with its new tenant, The Yummy

Cookie. As soon as I walked in, it felt as if I was entering Grandma’s kitchen, as the smell of freshly baked cookies wafted to my nose. My daughter and I were welcomed with an extremely knowledgeable staff and rustic ambiance—thanks in part to tables with wildflower-filled mason jars. I couldn’t pass up trying their signature cookie, ironically called “The Yummy Cookie,” and made with chocolate chip and oatmeal batter alongside dark chocolate chips. Calling it a cookie really doesn’t do it justice though—it was more like a small piece of cake: soft on the inside with the right amount of crunch on the outside. Trust me when I say it was a delightful dance of flavors on my palate. Of course, I needed something to wash it down with, so I went with the Blended Caramel Mocha. Sweet and creamy with a perfect punch of caffeine, it was a frozen delight that I’d most definitely indulge in again.

Traditional hot and iced coffee drinks are also available, along with an array of non-cookie treats like bars, muffins (and muffin tops!), cupcakes, and monster peek-a-boos for the little ones—all made using natural, local and real ingredients without hydrogenated oils or preservatives. MARINATED TRI-TIP STEAK WITH YAM FRIES AND DIJONNAISE Steak is de rigueur for game-day barbecues, and tri-tip is a totally underrated version that is unbelievably flavorful—and won’t break the bank. This recipe offers easy prep, fast cooking, a knockout sauce, and double-knockout mustard. The yam fries bring it home. Rich red wine probably not optional. 2 lbs. yams or sweet potatoes, peeled and cut into 1/2-inch strips 1 tbsp. dry mustard 3 tbsp. raw honey 6 tbsp. grapeseed oil 3 tbsp. red wine vinegar 2 tsp. chopped garlic cloves 1 tsp. kosher salt 1 tsp. black pepper 3 lbs. beef tri-tip steak, cut into 6 portions 1 tbsp. ground cumin 2 tsp. chipotle chile powder Dijonnaise (recipe follows)

Preheat the oven to 400-degrees Fahrenheit. Place the yam strips, dry m u s t a r d , h o n e y, 3 tablespoons of 100% Real: 100 the grapeseed oil, 2 Insanely Good tablespoons of the Recipes for Clean Food Made Fresh by red wine vinegar, 1 Sam Talbot teaspoon of the garlic, (Oxmoor House, and 1/2 teaspoon 2017, $29.99) each of the salt and pepper in a large bowl; toss to combine. Divide the mixture between 2 aluminum foil-lined rimmed baking sheets. Bake in preheated oven until golden brown, 30-40 minutes, rotating baking sheets from the top rack to

the bottom rack halfway through. Meanwhile, whisk together 2 tablespoons of the oil and the remaining 1 tablespoon of red wine vinegar. Pat the steak pieces dry; rub each with the oil mixture. Stir together the cumin, chile powder, remaining 1 teaspoon of garlic, and remaining 1/2 teaspoon each of salt and pepper in a small bowl. Sprinkle on both sides of the steaks. Heat the remaining 1 tablespoon of oil in a heavy, ovenproof 12-inch skillet over medium-high. Sear the steaks in the hot oil, about 1 minute and 30 seconds per side. Transfer the skillet to the upper third of the oven; bake until medium-rare, 6-8 minutes. Transfer the steaks to a platter; let rest about 4 minutes before serving. Serve with the yam fries and Dijonnaise. Serves 6. DIJONNAISE 1/2 cup olive oil mayonnaise 3 tbsp. plain Greek-style yogurt 2 tbsp. Dijon mustard Combine all the ingredients and serve.

Moonraker Brewing Co. is currently the hottest brewery in the Sacramento region. They opened just over a year ago and have already made an insanely huge splash on the local beer scene—winning “Best New Brewery in California,” “Best New Beer” for their Yojo IPA, and “Ninth Best New Brewery Worldwide” (out of 6,500) by RateBeer. Most recently, the Auburn-based brewery started canning their craft using mobile canning service, The Can Van. Elite Medical Aesthetics was founded based on my vision for customized care. I've always been extremely passionate about providing quality medical services, and my idea of breaking away from “cookie-cutter” care is what makes my practice so unique.

Madame Ladybug is a period subscription box service for women and young girls. We are here to make that time of month “the” time of month. Our lady boxes will have you looking forward to your period. I founded Madame Ladybug in hopes to pamper, support and empower women during the challenging and painful symptoms of PMS. We put a lot of thought, love and effort into designing and creating our lady boxes—all for you to have a simpler, happier and comfortable period. Turn your period into an exclamation point with us!

Why is your staff the best in the business? They go above and beyond for all of our patients; each one is different, and so are their individual goals and needs. It’s extremely important that our patients feel they can trust and believe in the practice, as reputation is essential to us, and they strive to always maintain a good name.

What’s your hidden talent? My hidden talent is no secret. I'm known for being artistic and precise; my strong attention to detail helps ensure every patient leaves the office happy with their treatment and excited to come back.

What’s your biggest job perk? The biggest perk of having a medical concierge practice that provides personalized care for health, beauty and life is the variety of patients that come with it. Every day is different and each patient brings different goals. Whether it’s finding out why a patient isn’t feeling well, or helping a patient achieve a more youthful appearance, it’s always rewarding to be a part of someone’s joy.

What was the first job you ever had, and what did you learn from the experience? My first job was as a greeter at Pacific Sunwear. I learned customer service is vitally important in any business; from greeting people with a smile to assisting with product inquiries, customers should be your main and most important focus.

What life accomplishments are you most proud of? Three years ago, Madame Ladybug was just an idea, and today we are touching the lives of women across the globe.

Who is your role model in business or in life, and why? My mother. Being from another country and not speaking the native language here, while balancing work and raising three children, she proved that if a woman puts her mind and heart to something the world is hers.

What’s your favorite local event that you go to?

What’s your hidden talent?

I enjoy attending the local mixers and events that are hosted through the Rocklin Chamber of Commerce. Due to my busy schedule and rapidly growing practice, making time to get out and get together with friends can be difficult. The chamber events are a great place for me to stay involved in the community, while also staying connected with friends.

I’m an avid dancer.

What’s your biggest job perk? My staff and I test out all the products and goodies featured in our lady boxes; taste-testing different chocolate and snacks, and trying out the various spa products is the highlight of our day.

And finally, customer service is…? Customer service is the foundation for a successful business.

Dance to Make a Difference Evening of Dreams

Kooper Richardson is a big, tough kid. He played for his dad, Kris Richardson, on the recently successful Folsom High School football team. He now digs in on UC Davis’ offensive line. His freshman stats list him as 6’6” and 298 pounds. He’s literally a “Big Man on Campus,” no matter what campus he happens to be on. But, for the past three years, Kooper has never been bigger than on a certain night in May. That’s when he sets everything aside—his free time, his comfort zone and, in 2016, his senior trip, so he can escort young ladies with special needs to a dance. It’s not just any dance, either. It’s Evening of Dreams, which has been held at Capital Christian Center since 2009. The red carpet event was the brainchild of Joe Alves and Michelle Raby. The idea? Pair young men and women who, because of physical or mental challenges, might not otherwise ever get to experience prom with “students of influence” from high schools throughout the region—frequently those active in sports or Student Government. Volunteers with cameras position themselves strategically as paparazzi. Cheers go up as every name is announced. Some of the kids boogie and dance down the carpet. Others shyly and quickly hustle inside. Still, others walk with the aid of their escort, or are pushed along in their wheelchairs. All of them smile—big, huge smiles—the radiant, face-stretching kind of smiles that only appear when they can no longer be contained; in other words, the best kinds of smiles. The escorts all have them, too. Inside, the gym is a prom director’s fever dream: hundreds of balloons, thousands of sparkling lights, miles of crepe paper, and music thumping loudly enough to crack your fillings. And there are no wallflowers: Everybody dances. And dances. And dances more. Raby recalls the time one young lady danced all night, on her knees, because her date was in a wheelchair. Kooper called his decision to skip his senior trip last year to escort Maddie “a no-brainer,” adding, “we had so much fun together. To see her so happy was something I’ll never forget.” This year’s event is May 20 and if by chance you come out and see those smiles parading down the red carpet, you’ll learn exactly what Kooper means; it’s something you will never forget, either. 1. She says most of the now 250-plus spots are filled up by midday by students like Kooper. “I became involved as a sophomore when they reached out to our football team,” he says. He joined high-profile teammates like Jake Browning and Cole Thompson, even though, Kooper admits, “my first year I was nervous, because I didn’t know what to expect.” But that changed quickly when he realized “people with special needs aren’t any different.” A YouTube video from last year of Kooper asking Maddie Morley, a Folsom High School student with autism, to Evening of Dreams went viral. Even though he’s in college now, he plans on being back. “This will be my fourth year, [and] it has changed my life in so many ways.” Most particularly, “it’s taught me to respect everyone, and treat everyone with kindness and equality.” Spiffed out in tuxedos and prom gowns, the kids and their escorts roll up in front of Capital Christian’s gym in classic cars and walk the red carpet like it’s some kind of world movie premiere.
